New Year's Day Maple Cocktail by Patrice Plante

NEW YEAR'S MAPLE COCKTAIL

(Ingredients for 1 cocktail)

  • 1/4 cup frozen cranberries

  • 1/2 oz dark maple syrup (preferably dark for its robust flavor)

  • 1 oz acerum, ideally aged; if unavailable, use white

  • 1 oz freshly squeezed pink grapefruit juice

  • 2 oz sparkling acer

  • 1 frozen cranberry coated in maple sugar, for garnish

INSTRUCTIONS

  1. In a shaker, muddle the frozen cranberries with the maple syrup.

  2. Add the acerum and grapefruit juice, fill with ice, and shake well.

  3. Strain through a fine mesh sieve into a champagne flute.

  4. Top with well-chilled sparkling acer.

  5. Skewer a frozen cranberry on a cocktail pick, dip it in maple syrup, and coat it with fine maple sugar.

  6. Place the cocktail pick on the edge of the flute.
