This exceptional cuvée, the result of extensive research and meticulous blending, reveals all the finesse and depth of Acerum.
PRODUCTION
Late-season maple syrup fermented with cachaça yeasts, then double-distilled in a copper still. Aged for 2 years in former Jamaican rum and American rye whiskey barrels. Finished in maple syrup casks toasted with a blowtorch.
NOSE
Opens with delicate aromas of candied pear, honey, and almond. Maple taffy and baked apples on the second nose.
PALATE
Notes of s’mores and orange blossom blend with subtle hints of burnt oak and maple.
Acerum is a maple eau-de-vie made from maple obtained exclusively through the distillation of alcohol derived from the fermentation of concentrated Quebec maple sap.
Produced by a small number of pioneering distilleries since 2017, Quebec's Acerum is on track to become a protected geographical indication (PGI).
