At Le Clan, it’s all about family and a genuine love for local products — and it shows. Every season, a new cocktail finds its way onto the menu of this truly exceptional restaurant.

This time, Olivier Parent has wowed us once again with his creativity, crafting Le Roseline, a delicious fusion of two classics: the Last Word and the Margarita. As for the name? It’s a sweet nod to a friend of Olivier’s named… well, we’ll let you guess!

Made in the style of tequila, our Acerum Blanc takes center stage here, shining through without being overshadowed by too many ingredients. The result? A delicate flavour, a subtle freshness, and a beautiful pale pink hue.

LE ROSELINE

  • 1 oz Fove Acerum Blanc

  • 0.5 oz Génépi or Chartreuse

  • 0.5 oz fresh lime juice

  • 0.75 oz crabapple syrup

  • 2 dashes lime bitters

  • 1 apple slice for garnish

GLASS

Marie-Antoinette (or coupe)

METHOD

  1. Fill a Marie-Antoinette glass with ice to chill it.

  2. In a mixing glass, add the Acerum Blanc, Génépi, lime juice, crabapple syrup, and lime bitters.

  3. Fill the mixing glass with ice and stir for about 1 minute.

  4. Discard the ice from the Marie-Antoinette glass.

  5. Double strain the mixture into the chilled Marie-Antoinette glass.

  6. Garnish the cocktail with the apple slice.

  7. Enjoy the delightful taste of this Fove Acerum Blanc-based cocktail!
